Easter Lunch, Alaska Style

At least, the way this Alaskan family ate, today.

Younger Daughter (the aspiring chef) began with a halibut filet: 2.7 pounds (after trimming) of fresh-caught halibut, to be exact.


Cut into individual servings:


The halibut was first pan-seared, seasoned with pesto, salt and pepper, and then finished in the oven.

For the sides, she fixed garlic mashed potatoes, carrots, and salad consisting of arugula, dried cranberries, candied walnut chunks, Gorgonzola cheese, and sliced pears. And oh yes, a balsamic vinaigrette dressing.


Dessert was simple - just strawberries and a bit o' cream.

We didn't go "all out" with fancy place settings or the fine china ... just a nice, comfortable meal for the four of us.

Two friends who were hosting Easter dinner today had some sort of marital spaz-out last night, so at 5pm yesterday I found out that I was hosting Easter dinner.

Was up till 2am prepping, and then worked all morning, but pulled it off.

Cheese plate with homemade charcuterie; a salad with grapefruit, soprasata, and romano; mango-glazed ham; curried pineapple chutney; herbed mash potatoes; maple-syrup flavored creme brule with homemade caramel sauce.

Next up: nothing but leftovers all week long. Yay!

And, at the end: coffee.

Lots and lots of coffee.

That's the only think keeping me awake right now.

wow, fresh halibut. I would love to get my taste buds on that. Very nice looking meal, my steak doesn't look so good now :(

wow. I don't eat much fish but all of that looked real good and i bet would cost $30 or more a plate in a nice restaurant.
